Aglio e Olio Rice and Sauteed Mushroom Platter

Aglio e olio rice and sauteed Mushroom Platter is the dish that winters deserve! The perfect special yet easy meal.

Serves: 2
- Aglio e olio rice
Ingredients :
- 1 to 2 tbsp oil
- 2 cups cooked rice
- 7–8 cloves chopped garlic
- 1 -2 tsp red chili flakes
- salt and pepper to taste
- 1 tbsp fresh chopped parsley
Method :
- Heat a pan on medium flame, and oil and garlic, stir and cook until the garlic turns light golden brown
- Add the cooked rice, red chili flakes, salt, and pepper. Mix well and cook for 2 minutes.
- sprinkle the parsley and gently mix well.
- Transfer into 2 bowls and keep it aside.
2. Sauteed Mushrooms
Ingredients :
- 2 tbsp oil
- 1 chopped onion
- 250 gms sliced mushrooms
- 8–10 cloves chopped garlic
- Salt and black pepper to taste
- 1 to 2 tsp soy sauce
- 1 to2 tsp mixed herbs
Method:
- Heat a pan on medium flame, add oil. Add onions and cook for 2 minutes.
- Add the mushrooms and cook until they turn golden brown(5 to 7 minutes)
- Add garlic cook for another 2 minutes.
- Add salt, pepper, and soy sauce. Mix gently (I prefer more pepper since it adds a nice flavor but this is as per your preference)
- Add mixed herbs, do a taste test
- Once ready keep it aside
3. Spicy Butter corn (Side dish)
Mix together the following :
- 2 cups boiled corn kernels
- 1 to 2 tbsp butter
- 1 tbsp red chili powder
- 1 tbsp lemon
- salt to taste
- 1/2 tsp black pepper powder
4. Assembling the Platter
- Place the rice bowl upside down on a plate and gently lift it
- Place sauteed mushrooms on one side of the plate
- Place butter corn on the other side
- Enjoy warm
