Sweet & Spicy cauliflower with Pesto


 A recipe that takes humble cauliflower to the next level !

Oven-roasted cauliflower in an irresistible sweet and spicy sauce on a bed of creamy pesto makes for a unique recipe

The crunchy almond toppings make for the perfect ending to this rich texture dish

So here’s the recipe:

  1. Roasted Cauliflower

Ingredients :

  • 2 cups blanched cauliflower florets
  • 3 tbsp mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp schezwan sauce
  • salt to taste
  • Black pepper to taste
  • 1/2 tsp Garlic powder (optional)
  • 1/2 tsp mixed herbs
  • 1/2 tsp red chili flakes

Method:

  • Preheat the oven at 200 degrees Celcius for 10 minutes
  • In a mixing bowl combine all the ingredients.
  • Add cauliflower florets at the end and mix well together
  • Line a baking tray with parchment paper and place the marinated cauliflower
  • Roast for 10–15 minutes at 180 degrees Celcius, then flip the florets and roast for another 8–10 minutes

2. Spring Onion Pesto

Ingredients:

  • 14–16 chopped spring onion leaves (green parts only )
  • 1 cup coriander
  • 4–5 cloves of garlic
  • 8–10pieces of walnuts
  • 3 tbsp oil
  • salt and black pepper to taste
  • 1 tbsp lemon juice
  • 2 tbsp water for easy grinding

Method :

In a food processor, grind all the ingredients, until it forms a smooth paste

3. Assembling the roasted cauliflower and Pesto

Ingredients :

  • Prepared Roasted Cauliflower
  • Spring onion Pesto
  • 6–8 slices of roasted almonds

Method :

  • Apply pesto on a plate
  • Place roasted cauliflower on top of the pesto
  • Top with roasted almonds

Serve Immediately
