Sweet & Spicy cauliflower with Pesto
A recipe that takes humble cauliflower to the next level !
Oven-roasted cauliflower in an irresistible sweet and spicy sauce on a bed of creamy pesto makes for a unique recipe
The crunchy almond toppings make for the perfect ending to this rich texture dish
So here’s the recipe:
- Roasted Cauliflower
Ingredients :
- 2 cups blanched cauliflower florets
- 3 tbsp mayonnaise
- 2 tbsp ketchup
- 2 tbsp schezwan sauce
- salt to taste
- Black pepper to taste
- 1/2 tsp Garlic powder (optional)
- 1/2 tsp mixed herbs
- 1/2 tsp red chili flakes
Method:
- Preheat the oven at 200 degrees Celcius for 10 minutes
- In a mixing bowl combine all the ingredients.
- Add cauliflower florets at the end and mix well together
- Line a baking tray with parchment paper and place the marinated cauliflower
- Roast for 10–15 minutes at 180 degrees Celcius, then flip the florets and roast for another 8–10 minutes
2. Spring Onion Pesto
Ingredients:
- 14–16 chopped spring onion leaves (green parts only )
- 1 cup coriander
- 4–5 cloves of garlic
- 8–10pieces of walnuts
- 3 tbsp oil
- salt and black pepper to taste
- 1 tbsp lemon juice
- 2 tbsp water for easy grinding
Method :
In a food processor, grind all the ingredients, until it forms a smooth paste
3. Assembling the roasted cauliflower and Pesto
Ingredients :
- Prepared Roasted Cauliflower
- Spring onion Pesto
- 6–8 slices of roasted almonds
Method :
- Apply pesto on a plate
- Place roasted cauliflower on top of the pesto
- Top with roasted almonds
Serve Immediately
